Shredded "Hash Brown" Potato Pile

This is for those of you who love a big greasy mess for breakfast. Extra points because it's vegetarian "friendly" (unless you fry it in bacon grease like I did that one time I was pissed off at that vegetarian)

Ingredients:

1 onion

2 or 3 red potatoes

cooking oil

Seafood seasoning salt


Wash the potatoes. Don't bother peeling 'em. They're red. Slice the potatoes into long thin slivers - think shoestring potatoes, and go thinner. Slice up the onion into long thin slivers. Heat up a couple tablespoons of oil in a nonstick pan. Toss in the potato and onion (you might need to do this in several batches depending on how big your pan is). Stir it around a little bit until it's a fried-together, oily, tangled mess (and the potatoes are cooked through and parts of the mess are crispy brown). Slop it on a plate and serve to your loved ones with seafood seasoning salt. I find this especially delicious the morning after a hangover. If you're serving it to someone with a hangover, be sure to mention you have "a feta omelette served in a dirty ashtray coming right up."
