first loaf came out very neutral. Double up sugar for extra sweetness? - doubled officially in recipe.


Next Up, nama shokupan (half the recipe):

Japanese Rich White Bread Ingredients ・500g Bread flour ・7g Salt ・80g Sugar ・6g Dry yeast ・200ml Heavy Cream ・220g Milk ・30g Butter ・Shortening

ーRecipeー 1.Add bread flour, salt, sugar, dry yeast and heavy cream to a rice cake machine and knead dough. After the dough becomes together, add butter and knead again (10-15mins in total).

2. Strech the dough and when it is not broken easily, add the dough to a bowl. Roll the dough into a ball and make the surface smooth. Leave the dough at 35C/95F until the dough get double the size.

3. Punch down the dough and divide into 4 pieces. Rest the dough for 10mins. Spread shortening on the mold during that 10mins.

4. Roll out the dough to square shape and fold in three and make it a round shape.

5. Put 4 into the mold and leave it at 40C/104F until the dough gets 80% the size of the mold (about for an hour).

6. Preheat the oven at 180℃ / 356F and bake for 20mins. Turn down the oven to 160℃ / 320F and bake for 20mins.
