Aurora's tomato sauce

Tools needed:
- Big sauce pot
- Frying pan
- Wooden spoon or spatula
- Food mill
- Small bowl that fits food mill on top
- Large bowl
Ingredients:
- 4-5 cans of whole peeled tomatoes (I use Redpak) Not sure how to do it with fresh tomatoes, but they're 28 oz cans.
- 1 medium onion, chopped
- half a head of garlic, peeled, cleaned
- 1 package of hot italian sausage (6 links, can use more)
- Olive oil
- Oregano, basil, salt, pepper, white pepper, cayenne
Directions:
- Stew tomatoes in large pot with a bit of water for at least 20 minutes
- Put food mill over small bowl and put stewed tomatoes through mill.
- As small bowl fills up with tomato juice, transfer it to the large bowl
- Brown onion, sausage, and garlic in olive oil in a frying pan (can be done concurrently with milling tomatoes)
- If you are using fresh oregano and basil, chop them fine and add to the oil with the garlic
- When all tomatoes are milled, pour remainder of tomato juice through the mill and finish up.
- Dump sausage-onion-garlic-oil mix into sauce pot.
- Add tomato juice and turn on heat to medium
- Add heavy shake of oregano, basil, salt, pepper and white pepper
- Omit dried oregano and basil if you've used fresh herbs
- Add dash of cayenne
- Bring to a boil, then reduce to low
- Cook on low for 2-4 hours, stirring occasionally.
Sauce will be thin.
If immediately using for lasagna or some other baked pasta, sausage can be pulled out and chilled to make easier to slice up, and put in a sauce layer. Otherwise, the sausage can be eaten separately.
