Ghetto-Fraiche Lemon Tofu

This recipe was made entirely from the things I found sitting out on my kitchen counter. I had one of those moments that was a cross between Project Runway and Hell's Kitchen, and well, if Tim Gunn and Gordon Ramsay had a butt-baby, this would be it.

Ingredients:

1/2 to 1 brick of extra firm tofu

4-5 tbsp Soy sauce

4-5 tbsp H20

1 tsp Brown sugar (bonus points for it being dried and crusty)

1 tsp Honey

2 packets True Lemon crystals (stolen from the cafeteria at work)

1 tsp cornstarch

1 tbsp oil

Heat up the oil in a frying pan. Cut up the tofu brick into cubes. Pan fry the cubes. While the tofu is frying, in a little cup or prep bowl, mix the soy sauce and water. Add the brown sugar, honey, and True Lemon and stir until homogenous. Wait until the tofu is about done, then whisk the cornstarch into the contents of the prep bowl and dump it into the hot pan with the tofu. Stir around until it's nice and sticky and congealed.

This is a basic ghetto sauce for any sweet 'n sour or lemon recipe - sweet and sour chicken, breaded tofu fingers, your vehicle of choice to propel the sauce from your plate to your mouth.
