Bottled a while ago.  Very smooth, honey flavor and aroma with a hint of the anise flavor from the original honey.  Beautiful and clear.

The local brew shop has Eucalyptus honey, and I'm very curious, so I decided to try a 1 gallon batch using just that honey.

  • 3 lbs Eucalyptus honey
  • 1 gallon water
  • Yeast nutrient
  • Yeast energizer
  • Lalvin D 47 yeast
