I couldn't think of a name for this salad that didn't involve some queefy use of the word "fusion," so it is for now the "Toss My" salad.
Ingredients:
Baby spinach
3 inches of cucumber (halved, and sliced paper thin)
1/2 Roma tomato (chopped)
1/2 avocado (sliced)
1 stick lowfat string cheese (peeled apart and cut into tiny cubes)
(optional: leftover piece of salmon from Rosemary and Honey Salmon recipe)
Dressing:
soy sauce
olive oil
rice vinegar
Dump all your vegetable ingredients into a big bowl. In a tiny bowl, mix equal parts oil and vinegar. Add in slightly less than 1 part soy sauce. Whist whipping salad dressing with a fork, pour over vegetables, then toss. Lay salmon log down on top and proceed to desperately jam salad in your mouth after having exercised so much restraint during preparation of the avocado and salmon.
