Fermentation will also take a while, probably more than a week in primary, and 3 or 4 in secondary. We're going to try a batch of barley wine. I'm still working on the recipe, though the advice I've gotten so far sounds like:
- 12-15lbs light malt extract
- 1-2lbs crystal malt
- 7-8 oz hops
- 2 packets of champagne or strong ale yeast
